Handmade shrimp roe noodles covered with a thick layer of shrimp roe, free of alkaline water. They are simple to cook: put a roll of noodles in boiling water, boil them over high heat for 3 minutes, and they are cooked and ready to eat along with a rich and fresh soup base, without the need to run cold water over the cooked noodles.
Established in 2003, the company has been operating its souvenir shop selling baked goods near the Ruins of St. Paul’s in the centre of Macao for more than 20 years. The founder Chang Kuok Tong, who has been devoted to the development of gourmet food gifts, created the double shrimp roe noodles, spicy flavoured pork jerky, and scallop and almond cake, which have become very popular among tourists looking for Macao souvenirs. The shop has also been featured in various media outlets in recent years.
